Ingredients:
Quick oats - 1 cup
Vanilla extract- 1/2 tsp
Almond milk - 1 1/2 cup
Maple syrup - 2tbsp
Super simple recipe; make oats how you normally do - by stovetop or microwave, (Maple Syrup is optional if you prefer sweetened oats) And for toppings I used
Hemp seed Mylk- 1tbsp
Granola
Homegrown blueberries
Homemade Mixed berry compote.
Coconut shaves
Hemp seeds

⭐️INGREDIENTS
Mango puree - 2 Cups
Plum - de stone and pureed (1 Cup)
Maple Syrup- 2 tbsp
⭐️ METHOD
✒ remove stones, and skin from plums to puree, add maple syrup and mix well. You can skip adding maple syrup if you want it less sweet. I added as my plums are sour to give a good flavour balance
✒ For Mango either you cut up fresh mangoes or buy frozen to puree
✒ Fill the moulds with the help of a measuring jug (makes pouring way easier) you can create all sorts of patterns by layering the two puree mixes.
✒ Freeze the Moulds for at least 4 - 5 Hours and enjoy.

Banana - 2
Vanilla extract- 1/2 tsp
BlackBerry powder- 1tsp
Blueberries- 1/3 cup
Soy milk - 1/3cup
METHOD
⭐️Blend everything together in a blender until thick and creamy texture.
⭐️Pour into your desired bowl and serve it with your favourite fruits and toppings.

INGREDIENTS
WATERMELON BLACKBERRY
Watermelon - 2 cups ( seedless )
Blackberries - 1/2 cup
Maple syrup - 2tbsp
Cumin powder- 11/2 tsp roasted & freshly grounded
Lemon Juice - 2tbsp
Rock salt - 1tsp
METHOD
1- Add watermelon, blackberries, maple syrup, cumin powder in a blender and blend until smooth.
2- Pour mixture through a fine mesh strainer to remove pulp and seeds.
3 - Once done add lemon juice, salt, and mix well. You can add lemon or sweetener for your taste preferences.
4 - Fill popsicle moulds with the mixture and freeze until frozen completely

INGREDIENTS
Spelt flour - 2 cups
Coconut sugar - 1 cup
Cocoa powder - 1/3 cup
Olive oil - 1/4 cup
Raspberries - 1/3 cup
Pinch of salt
Apple cider vinegar - 1tsp
Baking powder- 2tsp
Baking soda - 1tsp
Vanilla extract - 1 tsp
Almonds flakes - 1/4 cup
Berries
Soy milk - 1 cup
METHOD
⭐️Preheat the oven 180C & line your tray with Baking Paper
⭐️Whisk soy milk, sugar, oil, vanilla extract & Apple cider vinegar in a mixing bowl
⭐️In a different larger bowl, sift flour, cocoa powder, baking powder and salt
⭐️Gradually pour wet ingredients in with the dry mix and fold until smooth adding some berries. Make sure to not over mix.
⭐️Pour the batter into the prepared tin and spread till level.
⭐️Bake it for 30 to 35 minutes / Check by inserting a Butter knife or Skewer into the centre & if it comes out clean - let cool
FROSTING : COCONUT WHIPPED CREAM
Coconut cream - 1 tin Kept in fridge overnight
Sugar - 4tbsp or maple syrup
Vanilla extract- 1tsp
⭐️Scoop out thick cream into a bowl, beat cream with an electric mixer until it forms peaks, then add mashed berries, sugar and vanilla extract, mix well.
⭐️Keep the frosting in the fridge for at least 1 hour before spreading on the cooled brownie.

Summer Breakfast Ideas are easy with this delicious Oats & Chia Pudding base! Mix it up with all sorts of Fruits in season 🍒🍓🍑🥭🍐✨

INGREDIENTS
Oats - 1/2 cup (Serves 2)
Soy milk - 2 cup
Chia seeds - 3 Tbsp
raspberries- 1/3 cup (Extras for decorating)
Maple syrup - depends on individual taste
Cinnamon stick - 1
Vanilla extract- 1 tsp
Coconut cream- 1/2 cup
METHOD
⭐️In a pan add oats, cinnamon stick, raspberries with your 1 cup of soy milk, boil and cook until it's done. You can add water or more milk if you prefer a runny consistency.
⭐️Add in Maple syrup and mix well.
⭐️For chia pudding- add chia seeds in a bowl & add the remaining cup of milk, with maple syrup. Mix well until combined and fluffy in texture.
⭐️To serve layer Oats, Chia Pudding & Raspberries and top it off with whipped coconut cream.

INGREDIENTS
Pomegranates - 1/4 cup
Raspberries- 1/3 cup
Jaggery - 2tbsp
Lemon juice - 2tsp
Tea bags - 2
Water - 4 cups
METHOD
⭐️Combine Jaggery, Tea bags and 2 cups of water in a small saucepan. Boil water on low medium heat until jaggery dissolves, then let cool for about 10 minutes remove tea bags and transfer to a big pitcher.
⭐️Add raspberries, pomegranates, in a blender with remaining water and blend it until all mixed together. Then sieve to take out the pomegranate seeds and mix in your Jaggery water to this mixture.
⭐️Add some fresh mint, lemon juice, rosemary for extra flavour. Freeze over night and enjoy.
⭐️ You can substitute Jaggery with any kind of sugar it’s entirely up to you.

INGREDIENTS
Spelt flour whole grain - 2 cup
Baking powder 2tsp
Baking soda 1/2 tsp
Olive oil 1 cup
Soy milk OR almond milk 11/2 cup
Orange Juice - 1/3 cup OR Orange essence 1tsp
Cacao powder 3tbsp
Raw sugar OR coconut sugar 1cup
COCONUT CHOCOLATE CREAM FROSTING
Coconut cream 1tin
Vanilla extract- 1tsp
Maple Syrup - 3tbsp
Cacao powder- 2tbsp
METHOD
⭐️ Pre heat oven to 350° ( 180 °c )
⭐️ Add dry mixture to one bowl sift well
⭐️ Add oil and soy milk, orange juice, Raw Sugar in another bowl and mix well
⭐️ Add wet mixture into dry one and fold the mixture together (Be Careful not to over mix)
⭐️ Transfer everything into baking tin.
⭐️ Bake it for 40 to 45 minutes or until done completely.
⭐️ Once Cake is cooled down Spread your Chocolate frosting and decorate with Sugar dipped Caramelised orange Slices
